Apple Crumble

Apple crumble is a classic dessert.  Who can resist the smell of apple crumble baking in the oven.  

For me personally apple crumble  reminds me of my childhood.  Therefore I had to make a vegan version.  This is dairy free and  tastes so good, serve with custard or ice cream , you can’t go wrong.

INGREDIENTS ( serves 4-6 )

6 Large cooking apples

200g Dairy free butter ( vitalite )

150g Rice flour

150g Plain flour

175g Brown sugar

2 Tbsp Coconut sugar

1 Tsp Cinnamon

METHOD

Peel, core and cut the cooking apples into pieces.

Place the apples in a pan and just cover the apples with water and cook until the apples have reduced down and are really soft.

Transfer the apples to a baking dish and sprinkle over with the coconut sugar.

Sieve the rice flour, plain flour, cinnamon and brown sugar into a bowl.

Add the dry ingredients and the butter into a food processor and blitz until the mixture resembles breadcrumbs.  This can also be done by hand, by rubbing the butter into the flour.

Spread the crumble over the top of the apples evenly and then sprinkle a little  cinnamon and coconut sugar on top of the crumble.

Bake in the oven at 180 degrees for 30 minutes.  You know when it’s  cooked when the top is golden brown.

Serve with dairy free ice cream or custard made with dairy free milk.
