Sweet Chilli Dipping Sauce

Wow this packs a punch, but it’s so divine

and easy to whip up.  Compliments so many dishes and if like me, I love my sauces.  This goes hand in hand with my Chickpea and quinoa balls.

1 Large red Chilli

3 Cloves of garlic finely grated

1/2 Cup sugar

1/4  Cup white wine vinegar

3/4 Cup of water

3/4 Tsp salt

1 Tbsp tomato puree

1 Tbsp Rice flour or corn starch

2 Tbsp water

Place all the ingredients into a blender except the rice flour and 2 tbsp of water.

Blend on high speed for 1 minute.

Pour the blended sauce into a pan and bring to the boil.

Meanwhile mix the rice flour and 2 Tbsp of water together in a cup to form a smooth paste.

Once the sauce in the pan is boiling, add in the flour paste and stir until the sauce has thickened. Continue to stir for a few minutes until the sauce has reduced a little and you are left with a glossy thick sauce.

Pour your sauce into a dish and refrigerate.  Once the sauce has chilled it’s ready to use .
