Falafel Chickpea and Quinoa Balls

This a protein rich meal, relatively easy to make and can be made in advance.

Can be served with fried rice, quinoa, noodles , salad entirely your preference.

INGREDIENTS (serves 2)

2 Tins of chickpeas

2 Cups cooked quinoa

1 Clove garlic finely grated

2 Tsp ground cumin

2 Tbsp Nutritional yeast

2 Lemon juice

1 Tbsp Tamari sauce

Handful fresh parsley


Place all ingredients into a food processor and blitz for around 3 minutes,  until all the ingredients have combined.



Using a table spoon, scoop out some mixture and using your hands, roll into balls a little larger than a golf ball.  Place the balls on a baking sheet lined with grease proof paper.


Once all the mixture has been used pop them into the oven at 180 degrees celsius for 20 minutes.


I served the chickpea and quinoa balls with my sweet chilli dipping sauce, they go beautifully together.
