This pasta dish is silky smooth and so creamy. A bit more luxurious,
than other pasta dishes yet affordable and simple to make. A good source of your omega fats which as a vegan, are important to include in your diet.
INGREDIENTS ( serves 2 )
325g Whole wheat spaghetti
2 Ripe avocados
2 Tbsp Vegan parmesan Cheese ( recipe on my blog )
1 Tbsp Fresh lemon juice
2 Tbsp Nutritional yeast
1 Garlic clove finely grated
Handful fresh basil
1/3 Cup water
1 Tsp olive oil
Add the spaghetti to a pan of salted boiling water.
In a food processor place all of the other ingredients and blitz on high speed until you have a smooth consistency.
Drain the spaghetti and immediately add in the avocado sauce, if you have cherry tomatoes in your fridge, cut them in half and add them in also.
Divide between two bowls and if you wish, top with grated vegan cheese. Simple and delicious.
