As a vegan I still intend to enjoy all my favourite Christmas treats.
I personally prefer my brandy butter “gritty” but if you prefer it smooth then just use icing sugar instead of caster sugar.
50g Golden caster sugar
50g Icing sugar
2-3 Tbsp Brandy
Cream together the butter and sugar.
Once combined add in the brandy and stir until mixed through.
Spoon into a dish and refrigerate.
