Crispy Tofu Wraps

Trust me when I say tofu in a wrap is divine.  A great lunch to give you sustained energy for the afternoon whilst getting in  a good source of protein.

A quick lunch to make whilst delivering amazing flavours.

INGREDIENTS ( servers 2 )

4 Wholemeal wraps

1 Block firm pressed tofu

3 Tbsp teriyaki sauce or jerk BBQ

Spinach

Cucumber

Tomato

1 Avocado

METHOD

Drain the water from the packet of tofu and then place the tofu on a chopping board.  There is no need to press the tofu  as the water will steam out during cooking.

With a knife longer than the tofu slice the tofu into steaks.  I get 8 steaks.

Turn gas to medium heat and place a non stick skillet over the heat.  When the skillet is hot place the tofu in a single layer and leave untouched to cook for around 8 minutes.

After 8 minutes flip the tofu over and cook for a further 6 minutes.  The tofu should have a lovely golden colour.  At this point you can add a drizzle of sauce for extra flavour.  Teriyaki or jerk BBQ both work really well.  Flip a couple more times just to seal the sauce and then the tofu is done.

On a wrap start by placing the spinach, topped with avocado, topped with the tofu, topped with the sliced tomato and cucumber.  Repeat for the other wraps,  add a sprinkle of nutritional yeast and tuck in.
